Fresh Sashimi/Sushi
First, I'm a frequent customer (almost twice a week), so I've talked to Hiro (the owner) a lot and I know a lot about his operations. He's been in business for 20 years, same location and many familiar customers. By the way, he also recently earned 100% from the Health Department Restaurant ratings. (Longevity, popularity, and cleanliness speak volumes in my guidebook.) Hiro knows his fish. He was once a commercial fisherman and once operated a wholesale fish market. And, to this day, he's still an avid fisherman. He shops for fish about three times a week. His shopping days start early: about 5am. He visits 4-5 places, looking for the freshest fish for the best value. As his customers and shopping are constant, his fish tends to be very fresh. By the way, stick to his "Trust Me" board for the best choices. Lunch is a full service Japanese restaurant. Dinner features only the sushi bar (no kitchen food). (Don't ask for a rainbow, crunchy, or spider roll. He only makes traditional rolls.) Mention Pierre review in Chefmoz!
