It's actually not the chef's fault as well since appriciating all foods are the traditional culture in the highend sushi restaurants.
And Hiko sushi is one of such places which is pretty rare in LA.
I'm sorry to hear what you had experienced there.
If you dont like the rule, then you'd better choose casual place or more American style sushi restaurants.

Yes, the sushi is very good, but I was appalled by the sushi chef. The waitress will tell you that if you don't eat your rice, the chef will get mad because they don't serve sashimi. Know that she is not joking. Because the rice is warm under the sushi, it's easy for some of it to fall off. This is what happened to me. When the waitress saw that there was rice on my plate, she said that she couldn't serve the next item because there was still rice left on my plate and the chef won't serve me unless I eat it all. I then dumped the little rice that was left on my plate onto my napkin because I was full and didn't think it was right to force someone to eat every single grain of rice. The chef got so offended the he refused to serve us anymore sushi. I had to end my dinner that was enjoying up until then, very early. My friend and I were shocked at how ridiculous the chef was being. If I took off the sushi and purposely left the rice there, I'd understand, but fault me for not eating the rice that fell off the sushi because it was warm? That's absurd. Because of that kind of treatment, I won't go back.

The sushi here is great! Super fresh and melts in your mouth. I've been completely spoiled and it's hard for other places to match the quality of the sushi here. Sit at the sushi bar and enjoy the chef's choice for the day. The style is very traditional Japanese. Simple and all about the flavor and texture of the fish. You won't be disappointed.
