I used to co-own the location and brought it from one of the worst franchises to one of the best. The trick is to blend the shortening once a day, the amount of new shortening depending on the previous day's sales. Same goes with the friers. Also, never sell a packaged salad that is more than 3 days until the expiry date. The Sylvesters are a little hard to figure out at times but taught me a lot about quality control, business sense and overall appearance of the store. [..]
